Healthier, Copycat Costco Chicken And Cheese Quesadillas Recipe
Ingredients
- 1 tbsp olive oil
- 2 chicken breasts
- 1 package taco seasoning
- 1 red bell pepper chopped
- ½ white onion chopped
- 1 small tomato chopped
- 1 red chili chopped
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp chili powder
- 1 package mini corn tortillas
- 1 cup Cracker Barrel 3-Cheese “Mexicana” Mix (Cheddar, Queso Quesada, Monterey Jack)
Filling Ingredients
- 2 tbsp Greek Yogurt
- 1.5 tbsp sour cream
- 1 tbsp mild salsa
- 3 chipotle peppers in adobe sauce chopped
- ½-1 cup Cracker Barrel 3-Cheese “Mexicana” Mix (Cheddar, Queso Quesada, Monterey Jack)
- Salt & Pepper
Instructions
- Cut chicken breasts into small, bite-sized pieces. Toss with 3/4 pack of taco seasoning, garlic powder, paprika, chili powder, salt, and pepper.
- Chop red pepper, white onion, and red chili into small, bite-sized pieces. Set aside.
- Add olive oil to a pan over medium heat. Add chicken and cook for 2-3 minutes.
- Add in red pepper, white onion, red chili, and the rest of taco seasoning and mix. Cover for a few minutes.
- While the chicken and vegetables are cooking, in a separate bowl add Greek Yogurt, sour cream, salsa, chipotle peppers (in adobe sauce), shredded cheese, and salt and pepper. Mix together.
- Take the lid off the pan of chicken and mix. Take the pan off the heat once majority of the liquid is absorbed.
- Gently pour half the chicken/vegetable mix onto a cutting board and chop (be careful as it may still be hot). Add to the Greek Yogurt mixture and mix together. Then, add the rest of the chicken/vegetables directly from the pan and mix.
- Preheat a separate pan (or air fryer!) and add cooking spray or olive oil.
- Lay out corn tortillas and sprinkle about a tablespoon of cheese on each tortilla. Add about a tablespoon of the filling and close together, sealing with a toothpick to avoid them opening up.
- Fry the quesadillas for about 2-3 minutes per side. Once done, set aside and let sit for 2 minutes.
- Enjoy your cheesy, chicken quesadillas on their own or with a side of salsa and guac!
