Mushroom Bruschetta on Baked Brie Toast
Ingredients
- ½ baguette sliced
- 2 tbsp olive oil
- ¼ white onion diced
- 2 garlic cloves chopped
- 1 package cremini mushrooms chopped into bite-sized pieces
- 1 handful spinach
- 1 cup low-sodium beef broth
- 2 tsp aged balsamic vinegar
- 2 tbsp cottage cheese
- 1 tsp fresh lemon juice
- 1 wheel brie cheese
- ½ cup Parmigiano Reggiano grated
Spices/Seasoning/Oil
- 1 tsp unsalted butter
- fresh thyme
- fresh basil
- chili flakes
- salt
- pepper
Instructions
- Preheat oven to 400℉ degrees. Arrange baguette slices in a single layer on a rimmed baking sheet. Brush the slices evenly with olive oil.
- In a pan on low-medium heat add 1tbsp of EVOO, white onion, garlic, and spinach. Continue sautéing until the liquid is fully evaporated.
- Deglaze your pan with low-sodium beef broth, aged balsamic vinegar, unsalted butter, fresh thyme, fresh basil, salt, pepper, & chili flakes.
- On the side, blend together cottage cheese, lemon juice, salt and pepper. Once combined, add to the mushrooms and mix.
- Top the toasted baguette with Brie cheese. Broil until melted (1-2 minutes).
- Top with the baked brie baguette with the mushroom mixture. Top with fresh Parmigiano Reggiano and enjoy!
