Spicy Sausage Rigatoni Recipe with Zucchini and Peas

Savour the bold flavours of our Spicy Sausage Rigatoni with Zucchini and Peas. A perfect harmony of heat and freshness in every bite!

Equipment

  • 1 Large pot
  • 1 large saucepan

Ingredients
  

  • 1 box rigatoni
  • 1 tbsp olive oil
  • 1 zucchini sliced
  • 1 shallot chopped
  • 2 garlic cloves chopped
  • 3 hot italian sausages
  • 1/2 small can tomato paste (or 3tbsp)
  • 1/2 cup dry white wine (can sub for chicken broth or remove step entirely)
  • 9 ml Half & Half Cream (10% cream) (small carton)
  • 3/4 cup frozen green peas
  • 1 cup grated parmigianno reggiano
  • 1 drizzle sweet balsamic vinegar (aged)
  • 1 tbsp unsalted butter
  • 1 bunch fresh basil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 cup pasta water

Instructions
 

  • Add olive oil, sliced zucchini, and chopped shallot to a large pan set to medium heat. Sauté until soft.  
  • Start cooking rigatoni according to box instructions.
  • Add 2 chopped garlic cloves & 3 Hot Italian sausages (cut the casing & squeeze the sausage out). Cook until there is no more pink (5-8 minutes).
  • Add tomato paste directly to the pan with zucchini, shallots, and sausage. Cook for 2-3 minutes.
  • Add ~1/2 cup of white wine. Cook for 2-3 minutes or until wine is absourbed.
  • Add Half & Half (10% cream), frozen (washed) green peas, salt, & pepper.
  • Once steam is coming off the sauce, add in grated parmigiano reggiano, aged balsamic vinegar, unsalted butter, & a bunch of fresh basil.
  • Add your al dente rigatoni (directly from the pot of water) to the sausage sauce pan. Add in additional pasta water, half a cup at a time, to achieve your desired consistency.
  • Serve with a generous amount of grated parmigiano reggiano & a drizzle of chili oil on top (if you want some extra spice!🌶)
